Falooda belongs to the Indian street food Category. It is a good drink as well as good dessert . We can make royal falooda or simple falooda of our choice. But the main ingredient is falooda sev, subja seed and chilled milk of any flavor.

I bought this falooda sev from Hyderabad. It was very thin, so it was overcooked. You can keep an eye while cooking falooda sev. You can use normal vermicelli also.
Let us see how to make Falooda
Preparation time        - 30 minutes
Chilling time - 30 minutes
Serves - 2
Ingredients:
Milk          – 2 cups
Basil Seeds – ½ tbsp
Strawberry Ice Cream – 1/2 cup
Jelly         - ¼ cup
Falooda Sev – handful
Rose Syrup – 3 tbsp
Sugar – 1 ½ tbsp or to taste
Cherry – 3 for garnishing
Pistachios and almond – 1 tsp for garnishing(grated)
Method:
Heat 2 cups of water in a pan; let it come to a boil. Add Falooda Sev and let it cook for 3 minutes. Take it off the flame. Strain the Falooda Sev.

Soak the Basil Seeds in water for a minimum of 30 minutes, longer is better. Also, heat the Milk and let it come to a boil. Take it off the flame. Add Sugar and Rose Syrup and mix. Allow the milk-mixture to chill in the refrigerator – approximately 3 hours.

Prepare jelly as per directions in the pack and refrigerate for 30 minutes. Get ready with all the ingredients in the table and add in the serving glass.

 In a glass, add 1 tsp rose syrup, 1 tsp jelly, 1 tsp subja seed, 1 tsp falooda sev and then pour the Chilled Milk.

Add one scoop of strawberry ice cream.

Garnish with the grated pistachios, almonds and cherry. Serve immediately.

Note:
If you Like your desserts sweeter – just add extra rose syrup and sugar.
If you are running short on time, you can use cold milk (without boiling).
Health conscious people can use Low Fat Milk and Low Fat Ice Cream.
You can add finely chopped fruits also.
Cook falooda sev carefully. Mine was overcooked.
You can chill the serving glass also.
