Serrated knife is better than a flat edged knife for slicing tomatoes. Unless the flat edged knife is very sharp you will squeeze the tomato while slicing.

Do not use aluminum pan for cooking tomatoes, as the acid in the tomato will react with the aluminum. Using aluminum will make the tomato taste bitter too.

If the tomatoes are sour you can add a pinch of sugar and salt, which will change the taste and bring out the aroma of the dish.

To peel off the tomatoes you can show them for a while in the direct flame of the stove, so that the skin will come off easily.

The acidity of the tomato will slow down the cooking process, so it should be added only after cooking all ingredients.
