Tamil new year is celebrated on the first day of Chithirai in the tamil calendar. In 2018 the tamil new year falls on Saturday, the 14 April. Tamil new year is known as Tamil Puthandu or தமிழ் புத்தாண்டு , is also known as Puthuvarusham. Tamil new year festival date is set with the solar cycle of the lunisolar Hindu calendar, as the first day of the Tamil month Chithirai. Therefore it almost always falls on or about 14 April on the English calendar. The day is observed by Hindus as the traditional new year, but and is known as Vishu in Kerala, and Vaisakhi in central and north india.

 On this day , tamil people greet each other and the day is observed as a family time. Clean up their house , prepare a tray with fruits and flowers and auspicious items, light up the pooja Altar and visit local temples.People wear new clothes and youngster go to elders seektheir blessings and prat their respects and the family has a vegterian feast. Usually this feast consists of all the six tastes known as arusuvai, which symbolically means that the year ahead will have all the ups and downs   of life.

Thalippu Vadagam | Small Onion Thalippu Vadagam

Thalippu vadagam is a mixing of small onion, garlic and some spices. It is used in the seasoning of sambar, kootu and chutney. It enhances the flavor of the sambar. Some people make chutney with this vadagam. Only difficulity in making this vadagam is peeling small onion.

Thalippu Vadagam | Small Onion Thalippu Vadagam

Ingredients 
Small onion- 1/2 kg
Garlic- 50 gms
Cumin- 25 gms
Mustard- 25 gms
Urad dal- 50 gms
Tuvar dal - 50 gms
Red chilli- 15
Fenugreek- 1 tablespoon
Turmeric powder- 1 teaspoon
Salt- 1 teaspoon
Castor oil- 50 ml
Curry leaves- handful
Method:
Peel small onion and chop nicely. Crush garlic with skin. Grind urad dal, tuvar dal and red chilli in a mixer coarsely. Mix all the ingredients and 25 ml of castor oil in a large bowl and mix well. Keep aside for one day or 24 hours. Next day spread it in the plate and dry for about 8 hours under the sun.

Then roll in to balls tightly with the help of remaining castor oil. Dry for 3 to 4 days and keep it in the airtight container.

Note:
You can add Bengal gram instead of tuvar dal.
If you mwant You can add urad dal and tuvar dal as it is.
If you want you can crush small onion instead of chopping.

When summer women are interested to make vathal and vadams. It is useful when the veggies are high in rate. It is handy in the rainy season also. In chettinad we make kothavarangai vathal in different method. we see that later. Kothavarangai vathal and curd rice is a good combination of food in summer. Now we see how to make kothavarangai vathal.


Kothavarangai Vathal | Sun dried Cluster Beans

Ingredients:
Clusterbeans- 1/2 kg
Salt- 3 tsp
curd- 1 cup

Method:
Trim the edges of cluster beans. Wash it well.

Heat 1 litre of water. Add cluster beans and salt in the boiling water.

Cook cluster beans 3/4 th. Strain the water. Dry under the sun for two days.

 Whisk curd well with required salt (we have already put salt while cooking the cluster beans). Add sundried cluster beans.

Mix it well. Again dry under the Sun for two to three days.

Put it in the glass container and use it for six months. Fry in the hot oil and serve with curd rice.

Note: 
If you want spicy you can add chilli powder in the curd also.

Wheat is good for diabetes. Diabetic people eat chapati and wheat rava upma regularly. For a change i made wheat idiyappam with wheat. It is good for health because it is a steamed recipe. Wheat idiyappam is good for diabetes also.

Ingredients:
Dry roasted wheat  flour – 1cup
Salt – to taste
Water – as required

Method:
Dry roast wheat in a pan till nice aroma comes and slightly puffed up. Grind it in the rice mill.
Add salt and mix it well.

Add plain water little by little and make a smooth dough.

Fill the dough in the idiyappam press . Make idiyappam in the idli steamer.

Steam cook for 10 minutes. Serve with sambar.

we can make vegetable idiyappam also.
Don’t use hot water.

Sundakai is an iron rich vegetable. It is good for health. It is known as turkey berry in English. It increases body’s haemoglobin level. We can make vathal and store it for one year for further use. Sundakkai vathal is a key ingredient for vatha kulambu. We can fry it and use it as a side for curd rice.

Ingredients:
Sundakkai – 1 cup
Curd – 1 cup
Salt – 1 tablespoon
Method:
Clean and wash sundakkai. Break the sundakkai with stone. Dry in the direct sunlight for 2 days.

Add salt in the curd and mix it well. Then soak it in the curd for over night. Next day dry in the hot sun.

In the evening soak it in the remaining curd. Repeat the process till curd vanish. Then dry in the hot sun till crisp.

Whenever you want you can fry in the oil and serve with curd rice.

You can make it without curd also.
You can use it in the vathal kulambu.

Ugadi Pachadi

Ugadi Pachadi


Ugadi is a Telugu new year. Celebrated by telugu people. The day is celebrated by drawing colorful Rangoli, mango leaf decorations on doors, buying and giving gifts to friends and relatives.  On that day they  prepare and share a special food called pachadi. The pachadi is a notable festive food . It is a combination of all flavors – sweet, sour, salty and bitter. In south Indian Hindu traditions, it is a symbolic reminder that one must face all flavors of experiences in the coming new year.  So they make pachadi compulsory.

Ugadi Pachadi
Ingredients:
Raw Mango- 3 tablsp
Veppampoo- 1 tablsp
Green chilli- 1
Jaggery- 2 tablsp
Tamarind- marble size
Salt- to taste
Method:
Keep Ready all the ingredients. Chop raw mango and green chilly finely. Soak tamarind in little water.

Add jaggery to it. Add chopped raw mango and green chilli. Add salt.

 Rice flour vadam is very easy to make, even the beginners can try little quantity and try how it comes. It will dry quickly and this can be tried even on mild summer days. Try this and share your feed back with me.
Preparation time - 20 minutes
Drying time - 3 days
Yield - 150 gms

Rice Flour Vadam


Ingredients:
Raw rice flour - 1 cup
Water - 5 ½ cup
Greenchilli paste - 1 tsp
Salt - ¾ tsp
Cuminseed - ½tsp
Green food colour - pinch
Pink food colour - Pinch
Method:
Add rice flour in a vessel. Add 2 ½ cup of water and make a smooth batter without lumps. Boil  3 cups of water.

Add rice batter to it and stir continuously.Add green chilli paste, cumin seed and salt in the batter and stir well.

Cook slowly with continuous stirring. When rice batter becomes shiny, switch off the stove. Keep aside to cool.

 Divide this into three portion and food colours. Keep little amount of batter in the cloth with a help of spoon.

Dry in the hot sun. After a day sprinkle water on the reverse side of the cloth and peel. Put it in the plate and dry for another two days.

Then store in the air tight container for about a year or two.

Heat little oil in a pan and fry vadams. Serve with rice or any variety rice.

Note:
If you want you can add javvarisi flour 2 tablsp. Adding Javvarisi flour gives extra crispness to the vadam.
You can grind the rice and make the vadam also.
If you want you can add red chilli powder instead of green chilli paste.
 If you want you can add asafetida also.
